WebWounded dwaves need water (to be brought to them - you'll need free buckets as well) and don't drink alcohol, so this can explain the dehydration of your miner (and any other injured dwarves). If there was no food available, whether because of access issues or total absence, you'd be getting loads of (dwarf) cancels (job); hunting for vermin. spam.
